Bahama Breeze Breeze Wood-Grilled Chicken Breast Recipe
Ingredients
- Two 8-ounce boneless skinless Chicken Breasts
- 2 tablespoons Olive Oil
- Salt and freshly ground Black Pepper to taste
- 1/2 cup Wood Chips soaked in water for 15 minutes
- 1/2 cup Orange Glaze Recipe below
- 1/2 cup Citrus Butter Sauce Recipe below
- 2 servings Your Favorite Side Dish to serve
- 2 servings Your Favorite Vegetables to serve
Instructions
- Prepare Bahama Breeze Orange Glaze and Bahama Breeze Citrus Butter Sauce according to recipes below. Set aside.
- Lightly coat chicken breasts with olive oil on both sides. Sprinkle with salt and pepper, to taste, on both sides.
- Preheat grill to medium heat.
- Add wood chips added just prior to adding the chicken.
- Place breasts on grill and cook for 6 - 7 minutes per side, while flipping it over twice during the grilling. Check that the chicken has reached 165 - 170°F on a meat thermometer or the juices run clear when pierced with a fork.
- When chicken is fully cooked, baste generously with the orange glaze on both sides.
- Allow the chicken to cook for 1 more minute to caramelize the glaze.
- Serve immediately with warm citrus butter sauce and your favorite sides.

Bahama Breeze Orange Glaze Recipe
Ingredients
- 1/3 cup Orange Marmalade
- 3 tablespoons freshly squeezed Orange Juice
- 1 tablespoon freshly squeezed Lemon Juice
- 1/4 teaspoon Salt
Instructions
- Place all the ingredients in a kitchen blender and pulse until smooth.
- Store in a tightly sealed container, in the refrigerator, until needed for grilling.

Bahama Breeze Citrus Butter Sauce Recipe
Ingredients
- 2 teaspoons Olive Oil
- 1 tablespoon minced Shallots
- 1/2 cup freshly squeezed Orange Juice
- 1/2 cup White Wine
- 6 tablespoons Butter cubes cold
- 1 tablespoon Sugar
- Salt and freshly ground White Pepper to taste
Instructions
- Add oil in a heated small sauce pan.
- Add shallots and sauté for 1 minute.
- Add orange juice and white wine. Cook until reduced by 3/4.
- Reduce heat to low. Add butter cubes one at a time while whisking the sauce to evenly incorporate the butter. Do not allow the sauce to boil, as it will break.
- Add sugar, salt and pepper. Stir to combine.
- Then strain the sauce through fine mesh strainer. Serve hot - rewarm if prepared early.
