Ingredients
- 1/4 cup Butter melted
- 3 quarts Cuban Bread cut into 1-inch cubes
- 2 1/2 cups Eggs
- 1 1/4 cups Sugar
- 5 cups Milk
- 1 tablespoon Vanilla Extract
- 1/2 cup Coconut Rum
- 1/2 cup shredded Coconut
- 1/2 cup canned Pineapple diced
- Bahama Breeze Coconut Créme Anglaise Recipe below, to serve
Instructions
- Prepare Bahama Breeze Coconut Créme Anglaise according to recipe below, allowing time to chill.
- Preheat oven to 350°F.
- Toss 3 tablespoons melted butter with the Cuban bread cubes.
- Place cubes on a sheet pan.
- Place pan in oven. Toast until golden. Remove from oven and turn oven down to 300°F.
- Brush a medium-sized casserole dish with 1 tablespoon of melted butter.
- Add toasted bread cubes, spreading to cover bottom evenly.
- Mix all the remaining ingredients, including remaining butter, together. Pour mixture over the bread cubes. Press down on the bread cubes until they absorb most of the liquid.
- Place in 300°F oven and bake for 1 hour or until firm in the center.
- Serve warm with Vanilla Ice Cream and Bahama Breeze Coconut Créme Anglaise to pour over.

Ingredients
- 1 1/2 cups Heavy Whipping Cream
- 2 Egg Yolks
- 1/2 cup Powdered Sugar
- 1/4 cup Coconut Rum
Instructions
- Add cream, egg yolks and sugar to a small sauce pan set over medium heat.
- Stir constantly using a cooks spoon until the sauce starts to thicken, about 8 - 10 minutes.
- Add rum. Stir to evenly mix.
- Pour into a clean container and quickly place in an ice water bath.
- Place in the refrigerator to chill to 40°F.
