Applebee's Oriental Chicken Salad Recipe

Ingredients

Honey Oriental Dressing

  • 6 tablespoons Honey
  • 3 tablespoons Rice Wine Vinegar
  • 1/2 cup Mayonnaise
  • 2 teaspoons Dijon Mustard
  • 1/4 teaspoon Sesame Oil

Chicken

  • 1/2 cup All-Purpose Flour
  • 3/4 teaspoon Salt
  • 1/2 teaspoon freshly ground Black Pepper
  • 2 large Eggs
  • 1 cup Cornflakes finely crushed (measure after crushing)
  • 2 teaspoons dried Parsley
  • 1 teaspoon Garlic Powder
  • 1 teaspoon dried Dill
  • 1 1/2 pounds boneless, skinless Chicken Tenders (about 20 tenders)

Salad

  • 1 - 2 heads Romaine Lettuce chopped
  • 1 head Red Cabbage shredded
  • 1 - 2 heads Napa Cabbage shredded
  • 1 Carrot julienned or shredded
  • 2 -4 Green Onions sliced
  • 1 cup Chow Mein Noodles to top
  • 1 bag Toasted Sliced Almonds to top

Instructions

Honey Oriental Dressing

  • Place all ingredients in a small bowl. Mix well with a hand blender.
  • Refrigerate while you prepare the salad.
  • Save your unused Honey Oriental Dressing in a jar in the refrigerator and use it one other salads. It should keep several days.

Chicken

  • Preheat oven to 400°F.
  • Cover a baking sheet with aluminum foil. Spray lightly with cooking spray.
  • Place flour in a small bowl. Season flour with 1/4 teaspoon each salt and pepper.
  • Place eggs in a second bowl. Whisk slightly.
  • In a third bowl, mix cornflakes with parsley, garlic, dill, the remaining 1/2 teaspoon salt and the remaining 1/4 teaspoon of pepper.
  • Dredge chicken in flour to coat.
  • Shake off excess flour. Dip into eggs.
  • Shake off excess eggs wash. Dip into cornflake mixture. Roll it around to make sure entire surface is coated.
  • Arrange breaded tenders on prepared baking sheet.
  • Place in preheated oven. Bake for 12 to 15 minutes or until golden brown and chicken is cooked through. Flip once 1/2 through cooking.
  • Cut into bite-sized pieces. Set aside and keep warm.

Salad

  • In a large bowl, toss romaine, red cabbage, Napa cabbage, carrot and green onions.
  • Portion out salads into individual serving bowls.
  • Sprinkle almonds and chow mein noodles over top of each salad.
  • Place bite-sized chicken pieces onto each salad forming a pile in the middle.
  • Serve with Honey Oriental Dressing on the side.
