Prepare Morton's Season All Seasoning according to the recipe linked to in the Box below. Set aside.
Make a batch of The Best Honey Mustard You’ve Ever Tasted using the recipe linked to in the Box above. (Heck, make a double batch — you’ll love it!) Set aside.
Rub chicken breasts on both sides with Season All Seasoning.
Cover and place in refrigerator to marinate for 2 hours.
Preheat oven to 350°F.
Fry bacon crisp. Remove to a paper towel-covered plate to drain.
Pour off all bacon grease except about 1 tablespoon. Save removed bacon grease.
Return pan to stove. Set heat to medium.
Sauté mushrooms in bacon grease until soft. Remove and set aside.
Remove chicken from refrigerator.
Add another tablespoon bacon grease to same pan.
Place chicken in pan. Sauté until you see a slight golden color on the underside. Turn chicken over and cook until you have a slight golden color on each side and they are cooked in the middle but not dry.
Remove chicken breasts from pan. Place in a 9 x 13-inch oven-safe dish.
Brush chicken breasts with honey mustard.
Cover with prepared mushrooms.
Layer 4 1/2-slices of bacon on each breast.
Cover all 4 breasts completely with shredded cheese.
Place in preheated oven and bake for about 15 minutes or until cheese is melted and bubbly.
Remove from oven and place on serving plates.
Sprinkle with parsley.
Serve extra honey mustard on the side for dipping.
