Chocolate Crust
- 1 1/2 cups Chocolate Cookie Crumbs
- 2 teaspoons granulated Sugar
- 3 tablespoons Butter melted
Raspberry Swirl Cheesecake
- 16 ounces Cream Cheese softened
- 1/2 cup Sugar
- 1/2 teaspoon Vanilla Extract
- 1/2 cup Sour Cream
- 2 Eggs
- 3 ounces White Baking Chocolate melted
- 3 teaspoons Red Raspberry Preserves
- White Chocolate Shavings for garnish
- Whipped Cream for garnish
Crust
Combine the crumbs, sugar and melted butter. Mix well.
Press firmly and evenly into a 9-inch springform pan.
Place in refrigerator while making filling.
Cheesecake
Mix cream cheese, sugar, vanilla and sour cream with electric mixer on medium speed until well blended.
Beat in eggs one at a time, beating at low speed.
Stir in white melted white chocolate.
Pour into crust.
Microwave preserves in small bowl on high 15 seconds or until melted.
Dot on top of cheesecake with small spoonfuls of preserves.
Cut through batter with knife several times for marble effect.
Bake at 350°F for 35 to 40 minutes or until center is almost set.
Cool.
Refrigerate 3 hours or overnight.
To serve, slice the cheesecake into 12 equal pieces.
Just before serving, apply a pile of whipped cream to the top of each slice and sprinkle liberally all over with the white chocolate shavings.
