Prepare Houston's Remoulade Sauce according to the recipe linked to in "Spotlight Recipes" below. Set aside.
Trim ends of leaves from the artichokes. Cut in 1/2 lengthwise. Remove the fuzzy choke.
Squeeze a bit of lemon on immediately to prevent browning. If preparing artichokes ahead of time, place them in a bowl of lemon water until ready to cook. (Whole Artichokes can be intimidating. If unsure about how to properly prepare an artichoke, please search online for a video demonstration.)
Place artichokes in a pressure cooker. Cook for about 8 minutes according to the instructions for your cooker.
Remove artichokes from cooker.
Preheat an outdoor grill for medium-high heat.
Squeeze remaining lemon wedges into a medium bowl.
Stir in melted butter and garlic. Season, to taste, with salt and pepper.
Brush artichokes with a nice coating of butter.
Place on the preheated grill. Grill artichokes for 5 to 10 minutes, basting with butter and turning frequently, until the tips are a little charred.
Remove from grill and sprinkle with a small bit of chopped parsley.
Serve immediately with Houston's Remoulade.
