Ingredients

  • Houston's Remoulade Sauce (See "Spotlight Recipes" below for a Link to this Recipe)
  • 2 large fresh Artichokes
  • 1 Lemon cut into quarters
  • 3/4 cup Butter melted
  • 4 cloves Garlic peeled and chopped
  • 1 teaspoon Salt
  • 1/2 teaspoon freshly ground Black Pepper to taste
  • Parley chopped fine, for garnishing

Instructions

  • Prepare Houston's Remoulade Sauce according to the recipe linked to in "Spotlight Recipes" below. Set aside.
  • Trim ends of leaves from the artichokes. Cut in 1/2 lengthwise. Remove the fuzzy choke.
  • Squeeze a bit of lemon on immediately to prevent browning. If preparing artichokes ahead of time, place them in a bowl of lemon water until ready to cook. (Whole Artichokes can be intimidating. If unsure about how to properly prepare an artichoke, please search online for a video demonstration.)
  • Place artichokes in a pressure cooker. Cook for about 8 minutes according to the instructions for your cooker.
  • Remove artichokes from cooker.
  • Preheat an outdoor grill for medium-high heat.
  • Squeeze remaining lemon wedges into a medium bowl.
  • Stir in melted butter and garlic. Season, to taste, with salt and pepper.
  • Brush artichokes with a nice coating of butter.
  • Place on the preheated grill. Grill artichokes for 5 to 10 minutes, basting with butter and turning frequently, until the tips are a little charred.
  • Remove from grill and sprinkle with a small bit of chopped parsley.
  • Serve immediately with Houston's Remoulade.
