- 1 pound Ham Hocks or Country Ham
- 1 tablespoon Sugar
- Water enough to cover Ham Hocks or Country Ham
- 2 cups dry Pinto Beans washed, sorted and picked through
- 8 cups Water
- 1 1/2 teaspoons Salt
Do at Least One Day in Advance
Place ham hocks or country ham and sugar in a large pot. Add enough water to cover.
Place pot over medium heat and cook on low simmer for 2 hours.
When meat is tender, remove from broth (do not pour out broth) and pull apart with 2 forks to separate meat from fat, skin and bones.
Return meat to reserved broth.
Place in a sealable container and store in freezer overnight or until ready to cooks beans.
"Bean Day" or Up to One Week Before "Bean Day"
Add beans to a large pot. Add 8 cups water, salt and prepared ham with broth from above. Place over medium high heat and bring to boil. Cover and reduce heat to a simmer. Cook on a low simmer about 3 hours or until beans are tender. Alternately, place ingredients in a slow cooker and cook on low all day.
Serve immediately, hot, or place in a sealable container and store in refrigerator for up to 1 week. Reheat to hot before serving.
