Ingredients

  • Five 6-ounce Fillets of Salmon
  • 5 Eggs
  • 2 cup Mayonnaise
  • 4 cups Bread Crumbs
  • 1 cup diced Red and Green Bell Peppers
  • 1/2 cup diced Onion
  • 1 tablespoon fresh Dill
  • 1 tablespoon dried Yellow Mustard
  • 1/2 teaspoon freshly ground Black Pepper to taste
  • 1/2 tablespoon Salt
  • Clarified Butter to coat pan

Instructions

  • Preheat oven to 300°F.
  • Place salmon on a cooking sheet.
  • Place salmon in preheated oven. Bake for 8 - 10 minutes.
  • When done and flaky, remove salmon from oven and allow to cool enough to handle.
  • Remove skin, if necessary, and break salmon it into small pieces.
  • In a medium bowl, combine salmon, eggs and mayonnaise. Mix well.
  • Add bread crumbs, bell peppers, onion, dill, mustard, salt and pepper. Mix well.
  • Portion mixture into 12 equal-sided balls. Using your hands, form balls into round patties.
  • Lightly coat a 10-inch sauté pan with clarified butter. Place over medium heat.
  • As soon as the pan is hot, add enough prepared patties that will fit comfortably. Do not crowd. Cook patties for about 2 minutes or until lightly browned on bottom. Flip and cook for another 2 minutes or until patties are done in the middle, depending on thickness.
  • Remove to a plate and continue until all patties are cooked.
