Crust
- 1/2 cup Graham Cracker Crumbs
- 1/2 cup granulated Sugar
- 5 tablespoons Butter melted
Pie Filling
- 1 cup freshly squeezed or bottled Key Lime Juice
- 2 whole Eggs
- 1 tablespoon Lime Zest
- Two 14 1/2-ounce cans Condensed Milk
- Whipped Cream store bought or homemade, of choice
- 2 Key Limes thinly sliced
Crust
Preheat oven to 350°F.
In a mixing bowl, add crumbs, sugar and melted butter. Mix with your hands until completely combined into a dough.
Press crust mixture firmly into pie pan.
Place pan in preheated oven. Bake until brown, about 20 minutes. Remove and allow to cool to room temperature.
Pie Filling
Lower oven to 325°F.
In another medium bowl, combine key lime juice, eggs, lime zest and condensed milk. Mix well with a mixer or whisk.
Pour prepared filling into a cooled pie shell.
Place in heated oven. Bake for 15 minutes.
Remove from oven.
Run a generous circle of whipped cream decorously around the rim of the pie.
Place key lime slices decoratively onto the whipped cream around the rim of the pie.
Place in a tightly covered container. Place in the refrigerator, overnight to chill or until ready to serve.
