Ingredients

  • 1 pound box Penne Pasta
  • 2 tablespoons Oil
  • One 8-ounce can sliced Mushrooms or 8 ounces fresh Mushrooms sliced thin
  • One 14 1/2-ounce can of Italian Diced Tomatoes undrained
  • One 8-ounce can Tomato Sauce
  • 1 teaspoon Red Pepper Flakes or more, to taste
  • 1 cup White Wine
  • 2 cups Heavy Cream
  • Salt and freshly ground Black Pepper to taste
  • 1 bag fresh Spinach or Baby Spinach
  • 1 pound cooked boneless, skinless Chicken Breasts or Chicken Thighs cut into strips or bite-sized pieces
  • Parmesan Cheese shredded, to serve
  • Fresh Basil Leaves chopped, to serve

Instructions

  • Prepare pasta according to package directions just to dente (slightly underdone - it should still have a slight white ring in the middle). Drain. Set aside.
  • Pour oil into a medium skillet. Place over medium heat.
  • When oil is hot and shimmering, place prepared penne, mushrooms, tomatoes, tomato sauce and red pepper flakes in skillet. Stir to combine. Cook until heated and bubbling.
  • Add wine. Continue to cook until noodles turn a deep red and are done through.
  • Add cream and spinach. Cook, stirring, until spinach has wilted.
  • Taste. Add salt and pepper, to taste.
  • Toss in chicken and cook until just heated.
  • Remove from heat and serve with sprinkle with Parmesan cheese and basil.
