Ingredients

  • 1 cup All-Purpose Flour
  • 1 cup Beer
  • 2 tablespoons Hot Sauce
  • 1 tablespoon freshly ground Black Pepper
  • 2 Vidalia or other large Sweet Onions peeled, cut crosswise, and separated into 1/3-inch thick rings
  • Vegetable Oil for frying
  • Salt to taste

Instructions

  • Place flour into a bowl. Make a well in the center will a spoon.
  • Pour the beer, hot sauce and black pepper into the well. Using a whisk, mix until the mixture is just combined.
  • Strain the batter into a clean bowl and allow to rest, covered, for 1 hour.
  • Preheat 2 inches of oil to about 370°F.
  • Dust the onion rings with the additional flour, shaking off the excess.
  • Then dip and coat them into the batter.
  • Place in hot oil in small batches. Fry until they are golden.
  • Transfer the fried onion rings with a slotted spoon to paper towels to remove any excess oil.
  • Salt to taste.
