Ingredients

  • Two 16-ounce packages Coleslaw Mix
  • 2 medium Apples julienned
  • 1 large Carrot shredded
  • 3/4 cup chopped Red Onion
  • 1/2 cup chopped Green Pepper
  • 1/2 cup Apple Cider Vinegar
  • 1/3 cup Canola Oil
  • 1 1/2 teaspoons Sugar
  • 1/2 teaspoon Celery Seed
  • 1/2 teaspoon Salt
  • 1/2 cup coarsely chopped Dry Roasted Peanuts or Cashews

Instructions

  • Place coleslaw mix in a large mixing bowl.
  • Add prepared apples, carrot, onion and green pepper. Mix well to combine. Set aside.
  • In a small bowl, add vinegar, oil, sugar, celery seed and salt. Whisk well to combine fully and desolve sugar and salt.
  • Store both in a tightly covered containers, in the refrigerator, until ready to serve.
  • Just before serving, pour prepared dressing over salad. (If taking to a cookout, picnic, tailgating or party, combine when you get there, if possible.) Toss to coat.
  • Sprinkle with peanuts.
  • Serve cold.
