Ingredients

Cobbler

  • 2 1/2 pounds frozen Peach Halves thawed
  • 3 ounces Salted Butter
  • 3 1/2 ounces packed Brown Sugar
  • 2 teaspoons ground Cinnamon
  • 1 1/2 ounces Dried Cranberries
  • 3/4 cup Peach Schnapps
  • Vanilla Ice Cream for serving

Streusel Topping

  • 3/4 pound All-Purpose Flour
  • 1/4 pound Granulated Sugar
  • 1/4 pound Brown Sugar
  • 1/4 teaspoon Cinnamon
  • 1/8 teaspoon Nutmeg
  • 6 ounces Salted Butter cold, cut in 1-inch cubes
  • 1 teaspoon Pure Vanilla Extract

Instructions

Streusel Topping

  • Place all streusel ingredients - flour, granulated sugar, brown sugar, cinnamon, nutmeg, butter and vanilla - in mixer with a paddle attachment.
  • Mix on medium 15 to 20 minutes. Mixture should bind together.

Cobbler

  • Preheat oven to 350°F.
  • Cut peach halves in half (making quarters or wedges).
  • Place a pan big enough to hold peaches in single layer over on medium high heat.
  • Add butter. Cook until light brown.
  • Add peaches, brown sugar and cinnamon. Cook, stirring occasionally, for 8 to 10 minutes.
  • Add cranberries and Schnapps. Cook, stirring, for 2 minutes.
  • Pour peaches out onto a sheet pan. Set aside to cool for 10 minutes.
  • Place peaches in a large, oven-safe casserole dish.
  • Break streusel topping into 1/2 inch pieces. Sprinkle on fruit to cover.
  • Place in preheated oven and bake for 20 to 25 minutes, or until topping is golden and crisp.
  • Remove from oven and allow to cool slightly, about 10 minutes.
  • Serve warm with vanilla ice cream.
