Ingredients

  • 2 cups Honey
  • 1 1/4 teaspoons ground Nutmeg
  • 2 1/2 teaspoons ground Coriander
  • 1 1/4 teaspoons ground Cumin
  • 1 Cinnamon Stick
  • 1/3 cup freshly squeezed Lemon Juice
  • 1/3 cup freshly chopped Ginger
  • 1 fresh JalapeƱo seeded and chopped
  • 2 teaspoons freshly chopped Cilantro
  • 2 1/2 teaspoons Green Peppercorns
  • 3/4 cup Red Wine Vinegar
  • 3/4 cup Ketchup
  • 1/3 cup Soy Sauce
  • 2 1/2 teaspoons Black Peppercorns

Instructions

  • Place all ingredients in a sauce pan. Stir to mix.
  • Place over medium heat and slowly bring to a boil. Reduce to a simmer and cook until a syrup consistency, about 45 minutes.
  • Strain to remove all solids.
  • Allow to cool.
  • Store in a tightly sealed container, in the refrigerator, until ready to serve.
  • Can be done in advance. Warm before using.
