Ingredients

  • 1 pound boneless, skinless Chicken Breasts or Chicken Thighs
  • Cornstarch for dusting
  • 1 package fresh Mushrooms
  • 4 small Zucchini
  • 1 tablespoon Vegetable Oil
  • 1 tablespoon Sesame Oil
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Balsamic Vinegar
  • 2 cloves Garlic minced
  • 1 teaspoon ground Ginger
  • White Rice to serve

Instructions

  • Cut chicken into 1-inch chunks.
  • Lightly dust chicken meat cubes with cornstarch. Turn and toss to fully dust. Set aside.
  • Cut mushrooms in 1/2. Set aside.
  • Cut zucchini into 1/4-inch slices. Set aside.
  • Pour vegetable oil and sesame oil in a wok or a large skillet.
  • Place wok or skillet over medium high heat.
  • When oil is hot and shimmering, add prepared chicken cubes. Fry until golden brown. Remove to a paper towel-covered plate to drain.
  • Add zucchini and mushrooms to the skillet. Stir fry for a few minutes.
  • Add soy sauce, balsamic vinegar, garlic and ginger to zucchini and mushrooms. Stir to coat. Stir fry until mushrooms and zucchini are fully cooked.
  • Return chicken to the pan. Stir to coat with sauce, heating thoroughly.
  • Serve over sticky hot white rice.
