- 6 ounces Extra Virgin Olive Oil
- 1 tablespoon chopped Garlic
- 2 tablespoons chopped Italian Parsley
- 2 tablespoons fresh Oregano Leaves
- 2 tablespoons Capers
- 1 cup Black Olives coarsely chopped
- 3 cups diced Tomatoes
- 2 Anchovies chopped
- Salt and freshly ground Black Pepper to taste
- 1 cup reserved Pasta Cooking Water
To Prepare when Cooking or In Advance
Place all prepared ingredients, except pasta cooking water, into a large bowl. Mix well.
Store, covered, in the refrigerator, until ready to serve.
To Finish when Cooking
Cook pasta per recipe or according to package directions. When draining, catch pasta water in a bowl or cup. Measure out 1 cup.
Place prepared puttanesca sauce and reserved pasta water in large sauté pan.
Place pan over medium heat and heat to hot.
When hot, add prepared pasta and mix well.
Serve hot.
