Ingredients

  • 20 fresh Scallops
  • Kosher Salt and freshly ground Black Pepper to taste
  • 2 tablespoons Clarified Butter
  • 2 cups Mediterranean Couscous
  • 1 1/2 cups Sweet and Sour Tomatoes store bought or homemade, of choice
  • 2 sprigs Parsley
  • 2 grilled Lemon Halves

Instructions

  • Pat scallops dry with a paper towel (Wet scallops will not sear and brown properly).
  • Season scallops with salt and black pepper, to taste.
  • Place a large skillet over high heat.
  • Add clarified butter.
  • When butter is hot and shimmering, add a few scallops, do not crowd or add too many to handle. Sear until crisp and golden brown, about three minutes per side, flipping as needed.
  • Remove done scallops to a plate and keep warm. Continue until all scallops are cooked.
  • Warm couscous in a non-stick skillet.
  • Place hot couscous in the center of a warm serving platter.
  • Place scallops on top of the couscous.
  • Top scallops with the tomatoes, allowing some to fall around the outside of the platter. Garnish with lemons and parsley sprigs at the end of the platter.
