Ingredients

  • 1 1/2 pounds fresh Tomatillos
  • 1/4 cup minced Yellow Onion
  • 2 cloves Garlic peeled and minced
  • 2 Serrano Peppers stemmed, seeded and chopped fine
  • 1/2 teaspoon Kosher Salt to taste
  • 1/4 teaspoon White Pepper to taste
  • 3 tablespoons chopped fresh Cilantro

Instructions

  • Preheat oven to 350°F.
  • Peel the husks off the tomatillos. Place peeled tomatillos in a roasting pan.
  • Add onion, garlic and serrano peppers.
  • Place pan in preheated oven. Roast for 25 to 35 minutes. The tomatillos will break down and become juicy.
  • Remove from oven and allow to cool.
  • Pour or spoon entire mess into a food processor or mixing bowl. Process or mix until well-blended and chopped fine.
  • Pour out of processor, if using, into a mixing bowl.
  • Taste. Mix. Add salt and pepper, to taste. Mix again.
  • Add cilantro. Mix.
  • Store in a tightly sealed container, in the refrigerator, until chilled or until ready to serve.
