Peel the carrots.
Using a food processor with a shredding disc or a grater, shred the carrots coarsely.
Place shredded carrots in a large bowl.
Add raisins. Toss to mix.
In a small bowl, add mayonnaise, sugar and vinegar. Whisk to mix well.
Taste. Adjust mayonnaise, sugar and vinegar, to taste. Add salt and pepper, to taste. Mix.
Add prepared dressing to carrots and raisins. Toss to mix thoroughly.
Store, covered, in the refrigerator, until ready to serve.
