Ingredients

  • 12 ounces boneless, skinless Chicken Breasts cut into cubes
  • Vegetable Oil for frying
  • Cooked Fried or White Rice to serve

Marinade

  • 1 teaspoon Chicken Base (Not Chicken Bouillon; Chicken Base is a paste-like mixture available in gourmet or larger supermarkets)
  • 1/8 teaspoon White Pepper
  • Salt to taste
  • Sugar to taste
  • 1/2 teaspoon Cooking Wine
  • 1/2 teaspoon Sesame Oil

Batter

  • 3/4 cup All-Purpose Flour
  • 1/4 cup Cornstarch
  • 1 heaping teaspoon Baking Powder
  • 1/2 of an Egg beaten well
  • 2 tablespoons Vegetable Oil
  • 2/3 cup Water
  • 1/8 teaspoon Salt

Honey Sauce

  • 1/8 cup + 1 tablespoon Honey
  • 1/4 cup Sugar
  • 1/8 cup Ketchup
  • 1 tablespoon White Vinegar

Garnishes

  • Toasted White Sesame Seeds
  • 2 Green Onions chopped

Instructions

  • In a large bowl, combine all marinade ingredients. Mix well.
  • Place cubed chicken into bowl. Toss to coat fully. Set aside to marinate for 30 minutes.
  • While chicken is marinating, in a medium mixing bowl add all batter ingredients. Mix well. Set aside.
  • In another medium bowl, add all honey sauce ingredients. Mix well. Set aside.
  • When chicken is done marinating, pour 2 to 4 inches vegetable oil into a large cooking pot, Dutch oven or deep fryer. Heat oil to about 320°F.
  • Using tongs, dip several cubes of the marinated chicken into batter.
  • Place battered cubes into hot oil.
  • Deep fry turning cubes until done. Remove to a paper towel-covered plate to drain.
  • Repeat until all chicken is fried.
  • Pour honey sauce into a large wok. Heat until hot. Turn off heat.
  • Immediately add chicken pieces and toss to coat with still hot honey sauce.
  • Place prepared hot rice on a serving dish.
  • Spoon chicken and honey sauce over rice.
  • Sprinkle with sesame seeds and green onions.
  • Serve hot.
