Ingredients

  • 1 pound Green Beans
  • 2 Green Onions white parts only
  • 2 tablespoons Cooking Oil
  • 3 dried Red Chili Peppers
  • 1 tablespoon thinly sliced Garlic
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Rice Vinegar
  • 1 teaspoon Sugar
  • 1/4 cup Water
  • 1/2 teaspoon Szechuan Hot Chili Flakes
  • Salt and freshly ground Black Pepper to taste

Instructions

  • Trim ends off green beans. Break them into 1 1/2 inch long pieces. Rinse and drain thoroughly. Set aside.
  • Slice green onions into strips to match beans.
  • Add oil to a wok.
  • Heat wok to medium high heat.
  • When the oil is hot, stir in green onions, red chili pepper and garlic. Stir fry briefly until aromatic.
  • Add green beans. Stir fry constantly until color turn dark green and 60 percent cooked.
  • Add soy sauce, rice vinegar, sugar, water and Szechuan chili flakes. Cover and cook at high heat for 1 - 2 minutes.
  • After the green beans are cooked through, season the dish with salt and pepper, to taste.
  • Serve hot with rice.
