Wash potatoes thoroughly.
Peel potatoes completely (or leave a small bit of skin on the potatoes, your choice).
Cut potatoes into smaller, equally-sized pieces. (This will allow the potatoes to cook more evenly and quickly.)
Place cut potato pieces in a large pot.
Cover with cold water to just above the top of the potatoes.
Place pot over medium high heat. Bring to a boil.
Turn down to medium heat. Continue to cook potatoes until fork tender.
Once potatoes are cooked, dump them into a colander to drain the water.
When potatoes are well-drained, place them back into a mixing bowl.
Add butter and milk.
Mix well with wire whisk or electric mixer until the desired consistency is reached.
Using a rubber spatula, fold in the salt and pepper. Stir well to incorporate.
Taste. Add more salt and pepper, to taste, if needed.
Reheat as needed and serve hot.
