Ingredients

  • 2 pounds Idaho Potatoes
  • 4 ounces Butter
  • 6 1/2 ounces Milk
  • 1/2 teaspoon Salt
  • 1/2 teaspoon freshly ground Black Pepper to taste

Instructions

  • Wash potatoes thoroughly.
  • Peel potatoes completely (or leave a small bit of skin on the potatoes, your choice).
  • Cut potatoes into smaller, equally-sized pieces. (This will allow the potatoes to cook more evenly and quickly.)
  • Place cut potato pieces in a large pot.
  • Cover with cold water to just above the top of the potatoes.
  • Place pot over medium high heat. Bring to a boil.
  • Turn down to medium heat. Continue to cook potatoes until fork tender.
  • Once potatoes are cooked, dump them into a colander to drain the water.
  • When potatoes are well-drained, place them back into a mixing bowl.
  • Add butter and milk.
  • Mix well with wire whisk or electric mixer until the desired consistency is reached.
  • Using a rubber spatula, fold in the salt and pepper. Stir well to incorporate.
  • Taste. Add more salt and pepper, to taste, if needed.
  • Reheat as needed and serve hot.
