Prepare Z'Tejas Green Chile Barbacoa according to Recipe linked to in the Box Below. Set aside and keep warm.
Place a medium skillet over low heat.
Place 1 tortilla on hot skillet and fry to just to soften.
Place on an oven-safe oval plate.
Spoon 2 tablespoons, more or less, Z'Tejas Green Chile Barbacoa in center.
Top with 1 tablespoon Jack cheese and 1 tablespoon green chile sauce.
Roll tortilla and leave in center of plate.
Repeat with remaining 3 tortillas, placing two tortillas on each plate.
Ladle remaining green chile sauce on top of enchiladas, dividing equally between the plates.
Sprinkle with cotija cheese.
Place plate under broiler to melt cheese.
When cheese melts, carefully remove from oven.
Top enchiladas with lettuce, a dollop of sour cream and pickled chiles.
Serve hot.
