Ingredients

  • Disney’s Animal Kingdom Lodge’s Tusker House Mango Chutney (See Box Below for this Recipe) to serve
  • Oil for deep frying

Pastry

  • 2 cups Flour
  • 1/2 teaspoon Salt
  • 4 tablespoons Vegetable Oil
  • 3/4 cup Water

Potato and Pea Filling

  • 5 Red Potatoes
  • 2 tablespoons Vegetable Oil
  • 1 cup Green Peas
  • 1 Green Chili de-veined and seeds removed
  • 1 teaspoon ground Ginger
  • 2 teaspoon Salt
  • 1 teaspoon ground Cumin
  • 1 teaspoon Curry Paste
  • 1 or more teaspoons Hot Sauce of choice, optional, if you prefer more heat

Instructions

  • Prepare Disney’s Animal Kingdom Lodge’s Tusker House Mango Chutney according to the recipe linked to in the Box below. Set aside.

Pastry

  • Add flour and salt to a mixing bowl. Mix to combine.
  • Add oil. Mix until mixture resembles small bread crumbs.
  • Add water. Mix. Pour out onto a work surface and knead for 10 minutes.
  • Rub dough with oil. Place back in bowl, cover and set aside for 30 minutes.

Potato and Pea Filling

  • Boil potatoes until tender. Drain and allow to cool. Peel and dice.
  • Add oil to a medium skillet. Place over low to medium low heat.
  • When oil is hot and shimmering, add potatoes, peas, green chili, ginger, salt, cumin, curry pasta and hot sauce, if using. Mix and sauté heat for 4 to 5 minutes.

Samosas

  • Divide dough into 10 balls. Roll each into flat square-ish shape about 5 inches across. Cut in 1/2.
  • Fill each with 1 tablespoon potato and pea mixture. Brush a little water around the edge of the pastry, fold, seam and seal.
  • Pour about 2 inches of oil for frying into a large frying pan or pot.
  • Place over medium to low heat and heat to 350°F.
  • Carefully add samosas to hot oil. Fry slowly, turning the samosas as they brown and are crisp. Remove to a paper towel-covered plate to drain.
  • Serve hot with Disney’s Animal Kingdom Lodge’s Tusker House Mango Chutney.
