Ingredients

  • 5 Butternut Squash
  • 1/4 cup Olive Oil
  • 2 teaspoons Kosher Salt
  • 1 teaspoon freshly ground Black Pepper to taste
  • 2 teaspoons freshly chopped Thyme
  • 1/2 cup The Capital Grille Cranberry Pear Chutney (See Box Below for this Recipe)

Instructions

  • Prepare The Capital Grille Cranberry Pear Chutney according to the recipe linked to in the Box below. Set aside.
  • Preheat oven to 325°F.
  • Wash all the squash in cold running water. Peel, cut in 1/2, top to bottom. Remove the seeds. Cut each squash into eight pieces.
  • In a large mixing bowl, add squash cubes, oil, salt, pepper and fresh thyme. Toss to mix well.
  • Place seasoned squash medley in a single layer on a sheet pan.
  • Place pan in preheated oven. Roast 45 minutes or until tender.
  • Place warm squash in a large side dish.
  • Top with The Capital Grille Cranberry Pear Chutney.
  • Serve immediately.
