- 16 ounces New York Strip Steak or Steaks neatly trimmed
- 2 tablespoons Vegetable or Blended Oil
- 1 tablespoon Achiote Paste (Find in a Mexican or Latin American Grocery Store or, maybe, the Latin American Aisle of your local Supermarket)
- 1 ounce Blackening Spice store bought or homemade, of choice
- Pinch Salt and freshly ground Black Pepper to taste
Place a cast iron pan on stove over medium heat and heat for 20 minutes.
Place steak or steaks on a work surface.
In a small bowl mix oil, achiote paste, blackening spice, salt and pepper together to form a paste. Cover steaks on both sides with paste, rubbing in with hands to fully coat.
Carefully place steaks in hot pan. Sear each side for 8 minutes or until 110°F temperature is achieved.
Remove from pan and let steak rest for 3 minutes before cutting and serving.
