Cut chicken up into 1/2" cubes.
Pour oil into a medium skillet.
Place skillet over medium heat.
When oil is hot and shimmering, add chicken. Pan fry until almost done.
Sprinkle taco seasoning mix over nearly done chicken, stirring to coat.
When done and no longer pink on the inside, remove from pan and set aside to cool slightly.
Preheat oven to 325°F.
In a 13 x 9-inch casserole dish, arrange 1/2 of tortilla chips.
Dollop all around with 1 can bean dip, spreading dip a bit.
Sprinkle with 1/2 of the cheese.
Add an even layer of 1/2 of the prepared chicken.
Sprinkle a layer of 1/2 of the olives, 1/2 of the green chiles and 1/2 of the tomatoes.
Splash on a thin layer of salsa.
Repeat layers.
Place in preheated oven. Bake until cheese is melted on both layers. Ovens vary so just keep watching them and check the under-layer.
Serve with remaining or extra salsa, sour cream, diced jalapeno's and guacamole and/or other accompaniments and dipping sauces.
