Ingredients

  • 1 pound Chanterelle Mushrooms
  • 1 clove Garlic finely chopped
  • 1 sprig fresh Rosemary leaves pulled and finely chopped (discard stems)
  • 2 sprigs fresh Thyme leaves pulled and finely chopped (discard stems)
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon freshly ground Black Pepper to taste
  • 2 tablespoons Unsalted Butter

Instructions

  • Preheat oven to 425°F.
  • Clean the chanterelles (See Note above this Box).
  • In a large mixing bowl, add mushrooms, garlic, rosemary, thyme, olive oil, salt and pepper. Toss well to fully combine.
  • Place the mushrooms on a clean baking pan.
  • Place pan in preheated oven. Roast until tender, about 10 minutes.
  • Remove mushrooms from the oven. Quickly place in a mixing bowl.
  • Add butter. Toss to melt the butter and fully coat the mushrooms.
  • Place on a clean platter and serve hot.
