Ingredients

  • 1 large bag Tortilla Chips of choice
  • 4 grilled boneless, skinless Chicken Breasts or Thighs cut into cubes or pulled into strips
  • BBQ Sauce store bought or homemade, of choice (See Box Below for Links to Recipes)
  • 8 ounces grated Cheese - Cheddar / Monterey Jack Cheese Blend, Taco Blend, Mexican Blend or other of choice
  • 2 Green Onions, green and white parts included chopped
  • 1 jar Pickled Jalapeño Slices of choice, drained
  • Sour Cream to top
  • Salsa store bought or homemade (See Box Below for Links to Recipes), of choice, to top
  • 1/4 teaspoon ground Cumin

Instructions

  • Preheat oven to 350°F.
  • Arrange enough tortilla chips to cover and stack up about 2 - 3 inches on a large oven-safe serving dish or platter or a baking sheet lined with foil.
  • Spread chicken over chips.
  • Drizzle BBQ Sauce liberally over chicken, to taste.
  • PRO MOVE - Arrange just enough chips to cover the bottom of the platter. Add chicken and BBQ sauce. Now arrange a second layer over top and again add chicken and BBQ sauce. Even go for a third or more layers, if you feel daring.
  • Sprinkle cheese over top of chips.
  • Place chips in oven.
  • Bake 7 - 12 minutes, watching closely, until cheese melts and is bubbly.
  • Carefully remove from oven.
  • Sprinkle onions and jalapeño slices over top, to taste.
  • Place large dollops of sour cream and salsa on top.
  • Sprinkle cumin over all.
  • Serve hot (Be sure to warn your guests), with more sour cream and salsa on the side for dipping.
