Ingredients

  • 3 tablespoons Oil
  • 1/4 cup chopped Bell Peppers
  • 1/4 medium Onion peeled and thinly sliced
  • 1/4 cup thinly sliced fully cooked Steak (left over Steak works great in this recipe)
  • 3 Eggs
  • 1 tablespoon Sour Cream
  • 1 teaspoon Pancake Batter (This is IHOP's Secret Ingredient. Pancake batter makes the eggs a little more sturdy and filling, adds more moisture leading to fluffier eggs and gives just the slightest bit of tasty pancake flavor to the mix.   • Salt and freshly ground Black Pepper to taste
  • 1/4 cup shredded Cheddar Cheese
  • 1/4 cup shredded Pepperjack Cheese

Instructions

  • Add oil to a large skillet. Place over medium heat.
  • When oil is hot and shimmering, add onions and peppers. Sauté until fragrant and onions are translucent.
  • Add steak. Cook, stirring, until steak is just hot. Remove from skillet to a bowl and set aside. Do not clean skillet.
  • In a medium bowl, add eggs, sour cream, pancake batter, salt and pepper. Whip well with a whisk.
  • Place previously used skillet back over medium heat.
  • Pour egg mixture into hot skillet and cook eggs until firm enough to flip without tearing.
  • Flip eggs over. Turn heat to low.
  • Spread steak mixture evenly over eggs.
  • Spread Cheddar cheese and Pepperjack Cheese evenly over steak.
  • Fold in half. Allow to heat through and cheese to melt.
  • Remove to a plate and serve hot.
