Add oil to a large skillet. Place over medium heat.
When oil is hot and shimmering, add onions and peppers. Sauté until fragrant and onions are translucent.
Add steak. Cook, stirring, until steak is just hot. Remove from skillet to a bowl and set aside. Do not clean skillet.
In a medium bowl, add eggs, sour cream, pancake batter, salt and pepper. Whip well with a whisk.
Place previously used skillet back over medium heat.
Pour egg mixture into hot skillet and cook eggs until firm enough to flip without tearing.
Flip eggs over. Turn heat to low.
Spread steak mixture evenly over eggs.
Spread Cheddar cheese and Pepperjack Cheese evenly over steak.
Fold in half. Allow to heat through and cheese to melt.
Remove to a plate and serve hot.
