Ingredients

  • 3 boneless, skinless Chicken Breast halves or 6 boneless, skinless Chicken Thighs grilled, cut into bite-sided pieces
  • 8 cups Chicken Broth
  • 1 cup Carrot diced very thin
  • 1/4 teaspoon ground Allspice
  • 1/2 teaspoon fresh Thyme chopped
  • 1/8 teaspoon ground Cinnamon
  • 1 tablespoon fresh Ginger chopped
  • 1 tablespoon minced Garlic
  • 1 cup chopped Tomato
  • 1 cup Coconut Milk
  • 1 teaspoon Hot Sauce of choice
  • 3 tablespoons chopped Cilantro
  • Salt and freshly ground Black Pepper to taste
  • 1 cup Mozzarella Cheese shredded
  • 2 cups Tortilla Strips
  • 2 Limes cut into wedges, to serve

Instructions

  • In a large pot, add chicken, chicken broth, carrot, allspice, thyme, cinnamon, ginger and garlic.
  • Place pot over medium high heat. Bring to a boil. Reduce heat to medium and simmer for about 10 minutes, or until carrots are tender.
  • Add tomato, coconut milk, hot sauce and cilantro. Cook until just heated through. Do not boil.
  • Taste. Add salt and pepper, to taste.
  • Ladle soup into bowls.
  • Top with shredded mozzarella cheese and tortilla strips.
  • Squeeze juice onto soup from lime wedges or serve with a wedge on the side to allow your guests to season their bowls.
