Ingredients
10 - 12piecesOkratops removed and sliced in 1/4-inch pieces
1Eggbeaten
1cupCornmeal
1/4teaspoonSalt
1/4teaspoonfreshly ground Black Pepperto taste
1/2cupVegetable Oil
Instructions
In a small bowl, soak okra slices in egg for 5 to 10 minutes.
In a medium bowl, combine cornmeal, salt and pepper.
Pour oil in a large skillet. Place over medium-high heat.
When oil is hot and shimmering, remove okra slices from egg, a few at a time allowing excess egg to drip off, and dredge in the cornmeal mixture, coating evenly. Carefully place okra in hot oil. Cook, stirring continuously, until golden brown. Remove to a paper towel-covered plate to drain.
