Ingredients

  • 10 - 12 pieces Okra tops removed and sliced in 1/4-inch pieces
  • 1 Egg beaten
  • 1 cup Cornmeal
  • 1/4 teaspoon Salt
  • 1/4 teaspoon freshly ground Black Pepper to taste
  • 1/2 cup Vegetable Oil

Instructions

  • In a small bowl, soak okra slices in egg for 5 to 10 minutes.
  • In a medium bowl, combine cornmeal, salt and pepper.
  • Pour oil in a large skillet. Place over medium-high heat.
  • When oil is hot and shimmering, remove okra slices from egg, a few at a time allowing excess egg to drip off, and dredge in the cornmeal mixture, coating evenly. Carefully place okra in hot oil. Cook, stirring continuously, until golden brown. Remove to a paper towel-covered plate to drain.
