Ingredients

  • 2 1/2 teaspoons Butter
  • 1/4 large Onion chopped fine
  • 1 clove Garlic peeled and chopped fine
  • 1 1/2 cups Chicken Broth
  • 1 1/2 cups Instant Rice
  • 1/2 Red Roasted Pepper chopped fine (buy whole Red Peppers in a jar and chop fine)
  • 4 tablespoons Mexican Cheese Blend

Instructions

  • Place a large heavy saucepan over medium heat.
  • Add butter.
  • When butter has melted and is hot, do not burn, add onion. Sauté for 4 minutes.
  • Add chopped garlic. Cook 4 - 5 minutes more, or until onion is tender.
  • Pour in chicken broth. Increase heat to medium high and bring to boil.
  • Add rice to saucepan. Cook according to rice package directions.
  • Once rice is done, stir in red bell pepper and fluff with fork.
  • Top with cheese and serve hot.
