Ingredients

Dressing

  • 1/3 cup Cider Vinegar
  • 3 tablespoons Sugar to taste
  • 1 teaspoon Salt to taste
  • 1/2 teaspoon freshly ground Black Pepper to taste

Slaw

  • 1/2 medium size head Green Cabbage or One 16-ounce package shredded Cole Slaw Mix (Cabbage only)
  • 2 large ripe Tomatoes cut crosswise into 1/4-inch slices
  • 4 tablespoons Mayonnaise
  • 2 tablespoons Sweet Pickle Relish

Instructions

Dressing

  • In a large nonreactive mixing bowl, combine vinegar, sugar, salt and pepper. Whisk until the sugar and salt have dissolved.
  • Taste. Add more sugar, salt and/or pepper, to taste as needed - The dressing should be highly seasoned.

Slaw

  • Remove the core from the cabbage and discard.
  • Finely shred cabbage in a food processor or using using a mandoline or sharp knife. You should have about 5 cups of cabbage.
  • Add shredded cabbage to the bowl with the dressing, stir to mix. Let stand for 10 minutes.
  • Mound the slaw on a platter or plates.
  • Lean the tomato slices against the coleslaw (See picture above.)
  • Garnish with dollops of mayonnaise on top.
  • Place a spoonful of relish in the center of each.
  • Serve cold.
