Ingredients

Chocolate Wafer Cookie Crust

  • 1 1/2 cups finely crushed Chocolate Wafer Cookies
  • 2 tablespoons White Sugar
  • 1/4 cup Butter melted

Chocolate Chip Cookie Dough

  • 1/4 cup Butter
  • 1/4 cup packed Brown Sugar
  • 1/4 cup White Sugar
  • 2 tablespoons Water
  • 1 teaspoon Vanilla Extract
  • 1/2 cup All-Purpose Flour
  • 1 cup Semisweet Chocolate Chips

Cheesecake

  • 1 cup White Sugar
  • Two 8-ounce packages Cream Cheese diced
  • 1 cup Sour Cream
  • 3 Eggs
  • 1 teaspoon Vanilla Extract

Topping

  • 1 cup Sour Cream
  • 1 teaspoon Vanilla Extract
  • 2 teaspoons White Sugar

Instructions

Chocolate Wafer Cookie Crust

  • Preheat oven to 350°F.
  • Add chocolate wafer cookie crumbs, 2 tablespoons white sugar and 1/4 cup melted butter to a bowl. Mix well.
  • Transfer mixture to 9 inch springform pan. Press firmly into the bottom and 1/2 inch up the sides to from a crust.
  • Place in preheated oven and bake for about 8 minutes.
  • Remove crust and set aside. Leave oven on.

Chocolate Chip Cookie Dough

  • In a medium bowl, add 1/4 cup butter, brown sugar and 1/4 cup white sugar. Beat until well mixed.
  • Stir in water and 1 teaspoon vanilla.
  • Add flour and semisweet chocolate chips. Stir until combined. Set aside.

Cheesecake

  • In a food processor or with a mixer, beat 1 cup of the white sugar and cream cheese until fully combined.
  • Add 1 cup sour cream, eggs, and 1 teaspoon of the vanilla. Mix well.
  • Pour cheesecake mixture into prepared crust.
  • Drop cookie dough in 2 tablespoon portions evenly over the top of the cake, pushing dough beneath the surface.
  • Place in preheated oven and bake for about 40 minutes. Cake will jiggle slightly in center.
  • Remove finished cake from oven.

Topping

  • Add 1 cup sour cream, 1 teaspoon vanilla and 2 teaspoons white sugar to a medium mixing bowl. Mix until smooth. Set aside.

Top and Serve

  • Spread topping over hot cake.
  • Allow cake to cool to room temperature on the counter.
  • Then place covered, in the refrigerator, for at least 4 hours to chill completely, or until ready to serve.
