Ingredients

  • 1 pound boneless, skinless Chicken Breasts and/or Chicken Thighs marinated in store bought or homemade Teriyaki Marinade, grilled and cut into slices or cubes
  • 1 medium Zucchini cut into 1/2 lengthwise and sliced into 1/4-inch slices
  • 1 Carrot julienne (cut into thin "sticks")
  • 2 ribs Celery sliced into 1/4-inch slices
  • 1/2 head Broccoli cut into small pieces or 1 cup precut Broccoli Florets
  • 1 package Rice cooked according to recipe or package instructions

Instructions

  • Prepare chicken. Can be done in advance. Reheat to warm before serving.
  • Prepare Rumbi Island Grill Peanut Satay Sauce according to the recipe in the Box below. Set aside. Can be done in advance.
  • Place zucchini, carrot, celery, broccoli in a steamer. Steam until done.
  • Prepare rice.
  • Place 1/2 to 3/4 cup rice in 1/2 of a serving bowl.
  • Place chicken beside rice in the bowl filling up the bowl.
  • Place steamed vegetables over rice.
  • Serve hot with Rumbi Island Grill Peanut Satay Sauce on the side.
