Ingredients

  • 1 1/2 cups fresh Corn, cut from cob or 1 1/2 cups canned Corn Kernels, drained
  • 1 cup canned Black Beans rinsed
  • 1 sweet Red Pepper chopped
  • 1 Jalapeño seeded and finely chopped
  • 1 clove Garlic minced
  • 2 tablespoons freshly squeezed Lime Juice
  • 2 teaspoons chopped fresh Cilantro
  • 1/4 teaspoon Salt
  • 1/4 teaspoon freshly ground Black Pepper to taste

Instructions

  • Place all prepared ingredients into a large bowl. Mix well.
  • Place bowl, covered, in the refrigerator, for at least 2 hours to allow the flavors to blend or until ready to serve.
  • Store in a tightly sealed container, in the refrigerator, for up to 3 days.
