Ingredients

  • 2 tablespoons Shortening
  • 2 cups Potatoes peeled and thinly sliced
  • 1/4 cup chopped Onions
  • 1/2 teaspoon Garlic Salt
  • 1/2 teaspoon Salt
  • 1/2 cup chopped Green Chilies
  • 2 cups Water
  • Sour Cream to taste
  • 3 slices Bacon cooked crispy and crumbled

Instructions

  • Place shortening in a large skillet. Place over medium heat.
  • When shortening is hot, add sliced potatoes. Cook, turning mass over occasionally, until potatoes are beginning to brown.
  • Add onions, garlic salt and salt. Continue to cook until onions are tender.
  • Add green chilies and water. Reduce heat to low and simmer for 15 - 20 minutes.
  • Remove potatoes to a serving bowl, with a slotted spoon or strainer, to leave water in skillet.
  • Serve hot with added sour cream and crumbled bacon scattered over the top.
