Prepare Bonefish Grill Herbed Gorgonzola Butter according to the recipe in the Box below. Store in a tightly sealed container, in the refrigerator, until ready to use.
One hour before cooking time, remove steaks from refrigerator and let come to room temperature.
When ready to cook, pat steaks dry with a paper towel.
Sprinkle steak seasoning over both sides of each steak. Rub in with your hand.
Prepare steaks any way you choose - grill, bake, sous vide, sauté, - it is totally up to you. Here is an easy way to cook them on the stovetop.
Place large heavy skillet over medium high heat.
Drizzle olive oil to lightly coat the bottom.
When oil is hot and shimmering, carefully place a steak (both steaks, if your skillet is big enough) onto the hot skillet. Cook about 6 minutes, and then flip and cook 5 - 6 more minutes for 1 1/2 inch thick steak. (See chart below for cooking times for various doneness.)
Slice about 1/4 inch Gorgonzola butter disc off from the prepared butter log.
Place on top of the hot steaks. (If the butter does not melt as much as you like, place the steaks on a cooking sheet, place in an oven on broil and broil until cheese gets melted and bubbly
Serve hot.
