Ingredients

  • 6 cups Water
  • 2 cups Half-and-Half
  • 3 teaspoons Kosher Salt
  • 1/4 teaspoon White Pepper
  • 2 cups Quick Grits
  • 1 cup grated White Cheddar Cheese
  • 4 tablespoons Unsalted Butter cubed
  • Freshly ground Black Pepper to serve

Instructions

  • In a large saucepan, add water, half-and-half, salt and white pepper.
  • Place over medium high heat and bring to a boil.
  • Slowly pour grits into boiling water, whisking constantly (be careful not to splatter mixture on yourself - it will be very hot).
  • When all grits are added and incorporated, reduce heat to low. Continue to cook, still whisking often, until mixture thickens and becomes completely smooth, about 10 to 15 minutes.
  • Add cheese. Stir gently until cheese melts.
  • Whisk again to combine.
  • Turn heat off. Allow grits to rest for 5 minutes.
  • Add butter. Stir until completely smooth and shiny.
  • Serve hot with a black pepper grinder within easy reach.
