Bertucci's Rigatoni Broccoli and Chicken Recipe

Ingredients

  • 1 pound Rigatoni Pasta
  • 4 ounces Olive Oil
  • 1 pound boneless, skinless Chicken Breasts or Chicken Thighs cut into strips
  • 4 cups Broccoli Florets separated and cut to bite-sided pieces
  • 4 slices Lemon
  • 2 teaspoon crushed Garlic
  • 1 cup Chicken Broth
  • 2 cups Light Cream

Instructions

  • Prepare pasta according to package directions. Drain. Set aside.
  • Add olive oil to a large skillet. Place skillet over medium high heat.
  • When oil is hot and shimmering, add chicken pieces.
  • Sauté chicken in hot oil until done.
  • Add broccoli and lemon slices. Cook, stirring, for 1 minute.
  • Add garlic. Sauté for 1 minute.
  • Add chicken broth and cream. Cook until it begins to boil. Remove from heat. Place cooked rigatoni in a serving bowl or bowls.
  • Spoon or pour prepared sauce over rigatoni, making sure, if you are spooning into individual bowls, to evenly distribute the chicken and broccoli pieces.
  • Serve hot.
