Ingredients

  • 1 medium head of Green Cabbage
  • 1/4 small head of Red Cabbage
  • 3 Carrots peeled
  • 1 cup Mayonnaise
  • 1/4 cup Sugar
  • 2 tablespoons Apple Cider Vinegar
  • 1/2 teaspoon Salt
  • 1/8 teaspoon freshly ground Black Pepper to taste

Instructions

  • Using a shredding blade on a food processor and/or a knife, shred and chop cabbages into small pieces. (Alternatively, buy cole slaw or slaw mix in the produce section of your supermarket).
  • Using box grater or grating blade in a food processor, grate carrots (Alternatively, buy grated carrots in the produce section of your supermarket).
  • In a large bowl, add mayonnaise, sugar, vinegar, salt and pepper. Mix with a whisk to combine.
  • Add cabbage and carrots. Mix to combine.
  • Can be serve immediately. But for best taste, place, covered, in the refrigerator for at least 1 hour to chill and allow the flavors to develop.
