Cut pretzel rolls in 1/2.
Spread honey mustard on the bottoms. Place on serving plates and set aside.
Place oil into a medium saucepan.
Place pan over medium heat.
While oil is heating, rip turkey into pieces.
When oil is hot and shimmering, add 1/2 of the turkey to the pan. Sauté for about 3 minutes, turning to cook evenly.
When turkey is hot and toasted a bit, gather it into a pile in the center of the pan.
Top turkey pile with 2 slices Swiss cheese.
When cheese is melted, use a spatula to move the entire pile to one of the roll bottoms.
Repeat with remaining turkey, cheese and bun.
Top sandwiches with roll tops and serve hot.
