Ingredients
Cole Slaw Dressing
1 1/2cupsMayonnaise
2tablespoons+ 2 teaspoons Buttermilk
1tablespoonprepared Horseradish
1/3cupDill Pickle Relishstore bought or homemade, of choice
1tablespoonBrown Mustard
2teaspoonsCider Vinegar
2tablespoonsSugar
1/4teaspoonfreshly ground Black Pepper
Slaw
1 1/2cupschopped or shredded Cabbage
1/4cupchopped Parsley
2tablespoonschopped Green Onions
Instructions
Cole Slaw Dressing
In small bowl combine mayonnaise, buttermilk, horseradish, pickle relish, mustard, cider vinegar, sugar and pepper. Mix well with a whisk.
Place, covered, in the refrigerator, for at least 30 minutes to chill.
Slaw
In large bowl place cabbage, parsley and green onions. Toss to mix well.
Whisk prepared Cole Slaw Dressing.
Add 3/4 cup dressing to slaw. Mix until thoroughly combined.
Taste. Add more dressing, if desired.
Place bowl, covered, in the refrigerator, for at least 30 minutes to chill or until ready to serve.
Store remaining dressing in a tightly sealed container, in the refrigerator, to make more slaw later or for additional uses (It makes a great spread for sandwiches and burgers).
