Ingredients

  • 2 tablespoons Vegetable Oil
  • 6 Green Onions cut diagonally into 1/2-inch lengths, separating white parts from green parts
  • 1/2 cup frozen Peas and Carrots thawed
  • 1 Egg beaten
  • 4 cups cooked Long-Grain Rice cold
  • 1/2 pound frozen peeled medium-size cooked Shrimp thawed
  • 3 tablespoons Soy Sauce
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Sugar
  • 1/4 teaspoon White Pepper

Instructions

  • Add oil to a wok or large skillet. Place over medium heat.
  • When oil is hot and shimmering, add whites of green onions, peas and carrots. Stir fry in hot oil for 1 minute.
  • Add green onion tops and egg. Stir to scramble egg. Heat until egg is set.
  • Stir in rice and shrimp. Cook until just heated, gently separating grains of rice. Do not overcook, shrimp will become rubbery.
  • In a small bowl combine soy sauce, garlic powder, sugar and white pepper. Stir to mix.
  • Pour mixture over rice.
  • Cook and stir until well-mixed.
  • Serve hot.
