Ingredients

  • Bonefish Grill Cilantro Lime Vinaigrette (See Box Below for a Link to this Recipe)
  • 4 - 6 large or jumbo Shrimp, peeled, deveined, tails removed, grilled and chilled (See Box Below for a Links to some delicious Restaurant Recipes)
  • 1 bag Mixed Greens or 2 cups freshly cut Greens of choice
  • 1 bag frozen Roasted Corn thawed
  • 1 can Black Beans drained and rinsed
  • 1/2 cup crumbled Feta Cheese
  • 6 Grape Tomatoes cut in 1/2
  • 1/2 Red Bell Pepper cored and cut into thin strips (if the strips are long, cut in 1/2)
  • 1 medium Onion sliced

Instructions

  • Prepare Bonefish Grill Cilantro Lime Vinaigrette according to recipe linked to in box below. Set aside. (Naturally, this step can be done in advance.)
  • Grill shrimp according to a recipe linked to in box below or your favorite recipe. Place in refrigerator to chill while preparing salads. (Naturally, this step can be done in advance, too.)
  • Place 1 cup mixed greens in each of 2 bowl.
  • Sprinkle 1/4 cup roasted corn, 1/4 cup black beans, 1/4 cup feta cheese over each salad.
  • Carefully arrange 6 tomato halves, several bell pepper strips and several onion slices on each salad (...or just throw them on - Mark).
  • Place 2 or 3 prepared shrimp on top of each salad. (If they are not quite chilled, that's fine - James.)
  • Serve with Bonefish Grill Cilantro Lime Vinaigrette.
