Ingredients

  • 2 tablespoon Canola or Vegetable Oil
  • 2 Red Chilis seeded and finely minced
  • 1 pound uncooked boneless skinless Chicken Breasts, diced into 1-inch cubes
  • 1 Red Bell Pepper cored and cut into 1/2-inch slices
  • 1 Green Bell Pepper cored and cut into 1/2-inch slices
  • 1 Green Onion cut into 1/2-inch pieces
  • 2 stalks Celery sliced thin
  • 4 tablespoon Chicken Broth
  • 1/2 cup Dry Roasted Peanuts chopped, if desired
  • 2 tablespoons Rice Wine
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Chili-Garlic Sauce
  • 1 tablespoon Brown Sugar
  • 2 teaspoon fresh Ginger grated
  • 1/4 teaspoon roasted Sesame Seeds

Instructions

  • Add oil and red chilis to a wok or deep skillet. Heat until oil is hot and shimmering.
  • Carefully add chicken. Sauté for about 6 - 8 minutes, until chicken is cooked though. Remove chicken to a plate (or, in a wok, push to the side, if you like). Set aside and keep warm
  • Add bell peppers, green onion and celery to wok or skillet. Sauté until translucent.
  • Add chicken back in.
  • Add chicken broth, peanuts, wine, soy sauce, chili-garlic sauce, brown sugar and ginger.
  • Sauté for 5 to 6 more minutes until sauce forms and covers chicken and vegetables completely.
  • Remove from heat and serve over cooked white rice or noodles.
  • Garnish with sesame seeds.
