Prepare Pickled Red Onions according to the recipe below 2 hours or more in advance of making the salad. Store, covered, in the refrigerator, until ready to use.
Prepare BJ's Restaurant & Brewhouse Honey Vinaigrette according to recipe linked to below. Set aside. (May be prepared up to a week in advance.)
In a large bowl, combine baby greens, arugula, watermelon cubes, prepared pickled red onions and mint. Toss gently to mix.
Mound servings on chilled plates.
Top with feta cheese crumbles and fresh parsley, to taste.
Drizzle with BJ's Restaurant & Brewhouse Honey Vinaigrette, to taste.
Alternately, add feta, parsley and BJ's Restaurant & Brewhouse Honey Vinaigrette, all to taste, to salad in large mixing bowl. Toss gently to combine. Serve in bowl for guests to help themselves.
