To a large bowl add all ingredients, except wrappers and garnishes. Mix until just blended.
Place a dumpling wrapper flat on a work surface. Lightly brush edges with water.
Place 1 tablespoon prepared chicken mixture in center of wrapper.
Fold in half. Pinch edges to seal. Pinch pleats around curved edge.
Repeat with remaining wrappers and ingredients, placing dumplings on a tray in a single layer.
Cover and refrigerate until ready to cook for up to 2 hours.
When ready to serve, place 2 quarts water in large wok or saucepan. Bring to a boil.
Gently drop dumplings into boiling water several at a time. Cook 5 - 6 minutes or until cooked through.
Remove with slotted spoon. Drain briefly then place in warm serving bowls.
Continue until all dumplings are cooked.
Sprinkle with coriander, chopped peanuts and minced red bell pepper, to garnish.
Serve with soy sauce or other dipping sauces on side or drizzled on top.
