Add sausage to a large pot. Place pot over medium heat.
Brown sausage. Use a wooden spoon to break sausage into
medium size pieces.
When sausage is done cooking, remove pot from stove. Drain sausage completely in a large colander.
Return pot (do not wipe out) to the stove.
Add onions, butter, rosemary, garlic, thyme, black pepper and parsley. Sauté until onions are tender and fragrant.
Add 1/4 cup of flour and stir until flour is mixed completely.
Add drained sausage back to the pot. Stir very well.
Add heavy cream and half & half. Stir to mix.
Reduce heat to low and simmer until desired thickness. (If gravy becomes too thick, add a little 2% milk.)
Taste. Add cayenne pepper and salt to taste.
Serve hot.
