Ingredients

  • 1 pound Flying Biscuit Signature Free Range Chicken Sausage or other Breakfast Sausage of choice
  • 2 cloves Garlic
  • 1 teaspoon dry Rosemary
  • 1/4 pound Unsalted Butter
  • 1/4 cup All Purpose Flour
  • 2 tablespoons chopped Parsley
  • 3 teaspoons freshly ground Black Pepper to taste
  • 1 teaspoon Thyme
  • 1 large Onion diced
  • 8 cups Heavy Cream
  • 2 cups Half & Half
  • Cayenne Pepper to taste
  • Salt to taste

Instructions

  • Add sausage to a large pot. Place pot over medium heat.
  • Brown sausage. Use a wooden spoon to break sausage into
  • medium size pieces.
  • When sausage is done cooking, remove pot from stove. Drain sausage completely in a large colander.
  • Return pot (do not wipe out) to the stove.
  • Add onions, butter, rosemary, garlic, thyme, black pepper and parsley. Sauté until onions are tender and fragrant.
  • Add 1/4 cup of flour and stir until flour is mixed completely.
  • Add drained sausage back to the pot. Stir very well.
  • Add heavy cream and half & half. Stir to mix.
  • Reduce heat to low and simmer until desired thickness. (If gravy becomes too thick, add a little 2% milk.)
  • Taste. Add cayenne pepper and salt to taste.
  • Serve hot.
